When you do a device-to-device transfer, your accounts remain logged in, so once the transfer is done, you can start using your new phone more quickly.

An important note is that the devices must stay near each other for the process to work. It’s a straightforward method, and in the long run, it’ll save you a lot of time and effort over using an iCloud backup.
